Vegetarian Chontaduro Meatballs

A nutritious, colorful, and delicious option for those who prefer plant-based options or are looking for a light and versatile meal.

🧾 Ingredients (makes 12-15 small meatballs)

  • 2 tablespoons of powdered chontaduro

  • 1 cup of cooked lentils

  • ½ cup of broccoli

  • ¼ cup of carrot

  • ¼ cup paprika

  • ¼ cup chives

  • 1 clove of garlic

  • 1 egg

🍳 Preparation

Step 1: Blend the egg, vegetables, and garlic for 7 seconds (you can use a blender or food processor).
Step 2: Add the cooked lentils and beat for 4 more seconds.
Step 3: Transfer the mixture to a bowl.
Step 4: Add the powdered chontaduro.
Step 5: Mix with your hands or a spatula until a moldable dough forms.
Step 6: Form balls of the desired size.
Step 7: Cook in a pan with a little oil or butter over low heat for 3 minutes on each side or until golden brown.
Step 8: Serve with the sauce of your choice (recommended: creamy sauce or red wine sauce with chontaduro).

🌱 Healthy tip

You can substitute the egg with activated flaxseed (1 tbsp ground flaxseed + 3 tbsp water) if you want a 100% vegan version.
